1 lb. sharp yellow Cheddar cheese

1 lb. soft white cheese (such as fromage blanc, ricotta or feta)

6 eggs, beaten

5 tablespoons cornstarch

Canola oil for frying

Over large bowl, grate cheese.  Add eggs and cornstarch, stir to combine.  Shape mixture into small balls.  In deep frying pan, heat oil.  Drop balls into hot oil; fry until golden.  Serve warm.
