Arepa di pampuna - sweet-'n'-spicy pumpkin flapjacks-are the traditional breakfast in Curacao.  One bite and you'll know why

2 1/4 cups canned pumpkin

1/4 teaspoon ground cinnamon

1/2 cup milk

2 eggs

3 tablespoons sugar

1 teaspoon vanilla extract

1 cup all-purpose flour

1 teaspoon baking powder

1/4 teaspoon salt

1 cup rainsins, optional


Mix pumpkin and cinnamon; reserve.  In large bowl, whisk together milk, eggs sugar and vanilla.  In another bowl, combine flour, baking powder and salt; add to milk mixture and whisk to blend.  Stir in pumpkin until blended, then raisins.  Heat 1 tablespoon oil in nonstick skillet over medium heat; for each pancake, add 1/4 cup mixture to skillet.  Cook until pancake turns a bit dry on top, then flip over; cook until cooked through.  Repeat with remaining batter, adding more oil as needed.  Makes 10-12 pancakes.
