Orange Spiced Bread Pudding

2 eggs

4 egg whites

1/2 cup + 2 tsp sugar

1 qt. fat-free milk

1 tsp. grated orange zest

1 tsp. pumpkin pie spice

1 loaf (16 oz) cinnamon swirl bread, cubed

2 Tblsp. fat-free hot fudge topping, warmed

1 cont. (8 oz) frozen lite whipped topping, thawed

Preheat oven to 350F.  Coat 2-qt. baking dish with cooking spray.  In large bowl, whisk together eggs, egg whites and 1/2 cup sugar.  Whisk in milk, orange zest and 1/2 tsp. pumpkin pie spice.  Add bread; toss to combine.  Transfer bread mixture into baking dish.  In small bowl, combine 1/4 tsp.pumpkin pie spice and remaining 2 tsp. sugar; sprinkle over pudding.  Cover with foil.  Bake 30 minutes. Uncover.  Bake 20 minutes or until set in center and baked through.  Let stand 20 minutes before serving.  In small bowl, combine hot fudge topping and remaining 1/4 tsp. pumpkin pie spice.  Drizzle fudge mixture over bread pudding.  Serve with whipped topping.

Very Berry Cheesecake Salad

1 (8 oz) cream cheese, softened

1/2 cup sugar

8 oz cool whip, thawed

6 cups berries such as 3 cups strawberries, 1 cup blackberries, I cup blueberries, 1 cup raspberries

In a large bowl, beat together cream cheese and sugar until smooth and creamy.  Fold in the thawed cool whip.

Add strawberries, blackberries, blueberries and raspberries.  Fold carefully into the cream cheese mixture.  Serve immediately

Breakfast Biscuit Posies

This dish is all about a few cooking basics.  All you need is biscuit dough, your favorite jam (not jelly), confectioner's sugar and vanilla (for the icing), and a pair of kitchen scissors.

Prepare a batch of biscuit dough using your favorite recipe, mix, or a tube of refrigerator biscuits.  Separate or cut out round biscuits and arrange on a piece of parchment on a baking sheet.  Using kitchen scissors, make five to seven small radial snips around the edge of each biscuit, making 3/4-inch cuts from edge to center but leaving the center intact.  Using your thumb, make a well in each center.  Fill the centers with a spoonful of  your favorite jam-homemade is best.

Bake the biscuits according to instructions.  The snips will turn the biscuits into flower shapes as they bake.  Cool on a rack; drizzle the warm biscuits posies with an icing made of 1/2 cup confectioner's sugar, a bit of vanilla, and enough water to make it "drizzle-able."

Strawberry Pear-fection Smoothie

2/3 cup fresh or frozen sliced strawberries

1/2 cup cup peeled, diced pear

1 cup orange juice

1/4 cup old-fashioned oatmeal

In blender, combine all ingredients; chill overnight.  In the morning, blend until smooth.  Sweeten to taste with hone or maple syrup, if desired.

Makes 1 serving
